Artisanal Rum

Sin Pasado is an artisanal agricole rum, obtained from the direct distillation of fresh sugarcane juice using natural inputs and wild yeasts. It goes through a double distillation process in stainless steel stills, using a new technology designed with the expertise and unique

skills of Oaxaca rum producers. Therefore our rum is considered as the artisanal rum with the

greatest quality.

Origin: Santa María Tlalixtac, Oaxaca
Earth/Ph/Latitude: 800 to 1600 meters
Aging of cane: 14 to 24 months according to harvest and the sea level
Water: Pure water from manantial of Santa María, Oaxaca Fermentation: Produced in steel tanks
Distillation: Unique process of 9 stages which allows to reach 65-70% alc. vol.
Batch: We produce 1000 lts per batch, helping us to locate every batch of sugar cane.
Tasting notes: After a little aging of 3 month, using american oak, we achieve a great aroma and sweet flavor of fresh sugar cane.
Barrel aged:8 to 18 months
